For as long as I can remember, my mom has made this salad every time we go to our family for Christmas lunch. It has become "The Salad" that everyone talks about and if some of the family are overseas for Christmas instead of at home, they always tell us how much they miss this salad! My mother adapted this recipe from an old Afrikaans recipe book that came out in the 1940's, so the book is about 26 years older than her, but the vintage classic recipes are always great. This recipe should be made a day before serving.
*You must use a glass bowl, otherwise you can't see all of the layers. The reason for having to make the salad the day before is that the frozen peas marinade in the mayo, and they defrost, eliminating a raw taste.
